Mu Shu Beef and Chicken Stir Fry Over Quinoa

Quinoa

Directions:

  1. Place the quinoa in a fine strainer and rinse under cold water. Bring 3 cups of water with 1 teaspoon of Chef's Choice seasoning and 1/2 teaspoon of salt to a simmer. Add in the quinoa and simmer covered for about 15 minutes. Allow to rest 5 minutes. Stir once or twice during cooking time.
  2. After you get the Quinoa cooking, preheat a skillet or wok. Add a few drops of the sesame oil to the wok and fry the scrambled eggs. After they are almost cooked, pull them out and set them in a small dish to be added back in at the end.
  3. Add the rest of the sesame oil to the pan and sweat the garlic, pepper flakes and chef's seasoning in it. Add in all the vegetables and toast briefly, then deglaze with the water. Add in remaining ingredients except the corn starch and water.
  4. Allow to simmer for 5 minutes or until soft. Mix the corn starch and water together, and then stir it into sauce to thicken slightly. Sauce should coat or glaze the meat and vegetables.
  5. Serve over the Quinoa!
